For the Gift Shop, I have completed the "Pita - Stuff It!" Challenge.  

I've posted my original recipe to Just A Pinch.  It's a savory pita pocket that I've listed as a lunch course.  

The recipe is titled Chicken, Cucumber and Kalamata Olive Pita Pocket.

I used more than 4 Greek ingredients to create the pita recipe, which include: tomatoes, cucumber, Kalamata olives, feta cheese, onions, dill, basil, Greek yogurt, and pita pockets.

Your recipe looks awesome and I'll be pinching it.   How can you go wrong with those wonderful fresh ingredients.

Thank you for hosting this challenge Nancy, I enjoyed it very much.  image

It really challenged me, I made homemade pita bread the day before, so that I could use it in this challenge.

The pita sandwich is light but surprisingly filling, half of the sandwich made a lovely lunch for me and leftovers for tomorrow. (very happy about that, I get to enjoy it twice)

This lovely sandwich took 25 minutes to prepare, cook and assemble. From the Greek Ingredients list I used: arugula, basil and mint, halloumi cheese, Greek yogurt, cucumber, apples, orange zest and walnuts.
