I have a super productive garden this year (yay!) and signed up for a CSA, so I have zucchini and cucumbers literally overflowing my refrigerator.

Does anyone have any recipes that aren't zucchini pie, zucchini bread or pickles?  We love to try new things, but I can't really find too many different types of recipes to try with either veggie.  My family loves sautéed squash in butter, but I can only eat that so many meals in a row smiley: roll Thank you!!

NO pickles, NO pies, NO bread.

Zucchini brownies are really good or cookies; but, I don't have a good recipe for those.
Of course soup ... but, there are many many recipes for those out there.

By the way, do you have any zucchini blossoms yet? A traditional Mexican recipe uses the blossoms
and stuff them with all sorts of things: rice, ground meat, etc. You might check into that...


FYI: East Indians use cucumbers to make raita which is very similar to Greek tzatziki. Tzatziki is an ideal
way to use a surfeit of cucumbers.

Zucchini noodles are really good. I do like them. I mix them with regular fettuccine; then toss with pasta and just a splash of cream. Decadent, light, and delicious. For a garnish, a scoop of good ricotta and parm.

I like cucumber (tea) sandwiches w butter or cream cheese and watercress or dill, if desired.  There's a good-looking recipe for lemony cream cheese cucumber sandwiches on Pinterest.

And the flavored water(s) w strawberries, mint etc..  Also look at Spa pops.

We received zucchini last Friday in our CSA box. I sliced each zucchini lengthwise into 1/2" slices. Then lightly oiled (olive oil)
and grilled about 2-3 minutes each side (not too long or will turn mushy). I whisked together a simple Greek avgolemono sauce with egg, lemon juice
and little bit of chicken broth. Cooked on LOW until thick. Drizzled the avgolemono over the grilled zucchini. Garnished with coarse salt and fresh dill.
