Hi cooking friends, I would like to posting something in this new forum sharing with you a few recipes I made after visiting Perú two month ago.

Those all look and sound so good! I love the aji amarillo paste (I found it at Whole Foods) and have made several versions of the "potato salad" (for lack of a better word) and have also used it in lomo saltado dishes too.

Maito, thanks for the word on whole food - I found that paste once at the Latin market, but not again. This is a soup recipe I adapted that I thought was really good www.food.com/recipe/peruvian-style-corn-pepper-and-chicken-soup/484435

I made papas a la huacaina about ten years ago. It is unique and extraordinary! My brother
has visited Perù twice and has mentioned a few of these dishes above. ^^

Such an unchartered cuisine for me!
