Deb, if you mean me ... you are right. I grill everything. I like my grill way more than my oven/stove.
I know that Hawaii does grill fish on pineapple planks; but, personally, I have never tried it.
I have cooked on orange and grapefruit slices, wood planks, banana leaves. I can't wait to try it.
I think I may make a cucumber, pineapple, jalapeno salsa with the pineapple I cut up - to serve with the grilled fish.
I know a thin fish would not work best; I think a thicker fish, like Mahi or Grouper would work better.
