Some of my fellow Toasted Tourists dropped by unexpectedly last night. Since we are all foodies, I knew I had to whip up some food! I always have margarita makings in my pantry, so I started everyone off with that cocktail and quickly whipped up some http://www.justapinch.com/recipes/appetizer/other-appetizer/quick-and-easy-guacamole.html?utm_source=pinterest&utm_medium=social&utm_campaign=share by Bayhill -  in about 10 minutes. Luckily, I also had some tortilla chips on hand. 

After we all had a nice snack and enjoyed our margaritas and conversation, I decided to do a quick raid of our refrigerator and put out the fixings for a quick chicken fajita wrap (using some store-bought rotisserie chicken I had on hand). Everyone had fun putting their own personalized fajitas together. Get this - this main dish only took about 5 minutes! How easy was that?! :

Everything I prepared for our last minute guests took less than 30 minutes to make! I think everyone was impressed by that and by the good food that came out of that short time. image  Good Morning Everyone! (Afternoon already for me)  image ... I brought Texas waffles for your breakfast today, but don't expect that to be my daily routine. I'm making the rounds to read your posts & do updates. Can't wait to see what you were doing while I was playing Mahjong last night. I was the big winner, but Siggi has been pouting. He didn't win a single deal, poor thing.

Ok CG ... I moved to Iceland over 12 yrs ago & long ago confessed that I was hopelessly language-challenged at my "advanced age". So my bottom line here is ... Could I pls have a translation or at least your assurance that a translation isn't relevant to the Challenge? TYVM image

My DD likes seafood and had questions on how to make it but I have never touched or cooked seafood so I was no help to her. Called the LBOB ladies for help and they came over and surprised her with an afternoon of cooking anything she wanted.

While they were busy cooking I went a head and made something for everyone to eat.

Ahh, those accent things. They have them in the Icelandic language too & it's all very complex. They change the pronunciation & the meaning of the word. All the words are also gender-specific depending on the form used. I eventially opted to ignore the "hot mess" & learning the language. BUT I do know enough of the main conversational words that I can work out the gist of things if the spoken pace is slow enough to do that. I even watch the evening news w/Siggi now. image

There is nothing the Cherry Bombers like more than to combine their love of culture, parting and helping others and this morning they had just that chance.

 Yesterday the Jimenez family called waking me from a sound sleep stating the annual Tex-Mex music fest was in direr need of last minute help, I put out the sos to my fellow Cherry Bombers who came flying over without taking time to eat. Well I could not ask them to help out on an empty stomachs so in the tradition of the Tex-Mex culture put together a last minute Tex-Mex breakfast that would hold them through the day while they worked and played at the Music Festival.

Fiesta Rapido in North America Challenge


Whew, don't you love it when you plan something quick and easy for dinner.  We were looking forward to a quiet evening, sitting on the deck, sipping our beverages and enjoying a quick and easy meal.  Margaritas for me and Ice tea for the hubby.  Tonight's menu consisted of: coleslaw, hot dogs and burgers.  My hubby was one happy man, as he loves hot dogs and burgers bbq on the grill.

I was placing the pitchers of Spicy Grand Margaritas and Auga de Jamaica Hibiscus Iced Tea on the table, when I heard the doorbell ring. I was surprised, the door bell seldom rings at dinner time.  It was my friend and neighbor Donna and her two daughters, they were locked out of the house.  We laughed, they were just in time to join us for dinner.  Everyone sat down and I offered them a nice cold drink. 

While we sipped our margaritas, the girls quickly polished off the rest of my husband's nachos and salsa that he had been snacking on as well as the pitcher of iced tea.

It has been so hot here for the last few days, that I had planned to grill some hotdogs and burgers, make a coleslaw, nothing fancy.  My guests were pleased, they like hotdogs and burgers.  It was perfect, I could sit and enjoy a drink or two with my husband and friends before I fired up the grill for dinner. 

I left my husband and friends on the deck, while I went inside and proceeded to prepare all the vegetables and cheese that I would need for the dishes that I planned to serve.  It went faster that way and it only took 15 minutes to chop up or grate everything that was required.

Next, I made the sauce for the burgers, it doesn't get any easier than this, mix together salsa and sour cream.  Now I needed to mix the sauce for the hot dogs; because all the necessary ingredients were already chopped both sauces were ready in 5 minutes.  I put the sauces for the hot dogs and the burgers in small bowls, because some of the guests were picky eaters, they were served on the side with the rest of the condiments.

Once I had all the vegetables, cheese and sauces ready, I put together Annacia's Chile Rellenos Burgers  and got them on the grill right away, along with Linky's Texan Avo-Dogs ( beef hot dogs).  I decided to grill them rather than pan fry them. The thin burgers and jumbo hot dogs were cooked in 10 minutes and on the table before we knew it. 

I mixed Diana's lovely Texas Coleslaw, last, while I waited for the burgers and hotdogs to come off the grill.  It only took 5 minutes to mix all the ingredients together, for a wonderful treat.

Dinner was enjoyed by everyone, the picky ones declared the sauces to be amazing and they left with all three recipes.  What a wonderful end to a hot hot day.

OK...admit it. We've all been in this situation before. You are too hot and tired to cook and planned on reheating leftovers in the microwave for dinner. You are halfway through watching Wheel of Fortune when there is a knock at the door.


You look at your significant other and ask if they were expecting someone. They say 'no', so you open the door expecting to see a salesman. Instead, it is a couple of friends that you haven't seen in probably at least 10 years.


As happy and thrilled as you are to see them, the thought that is running through your head is: "Great, what am I going to feed them for dinner"? You don't want to serve them leftovers, and then it hits you-- you'll serve your famous "Fiesta Rapido" meal. The meal that is on the table is about 30 minutes. You try not to let them see you break out into your *happy dance* while you waltz into the kitchen to get the meal started. Fortunately, your refrigerator just happens to be stocked with numerous brands of Mexican beer, so you're able to get your guests started with drinks while you whip up dinner.

What a lovely surprise when my cousin turned up on a flying visit, of course she was starving and running on  a tight schedule!!

Well I decided to have the girls from the toasted Tourists over for supper and we started off with Mrs. Goodalls http://mexican.food.com/recipe/chipotle-deviled-eggs-187793 lovely with just enough heat wwhich I reviewed. Then we went on to beef fajitas by Jackie Oh NO http://www.food.com/recipe/grilled-steak-fajitas-300562 and finally we finished off with a light meal topper, http://www.justapinch.com/recipes/appetizer/appetizer-seafood-appetizer/grilled-cilantro-lime-shrimp-w-spicy-avocado.html#page1:comment1991062 We were full as can be and all enjoyed ourselves.
